I made primal pancakes for the first time on Sunday, and they turned out amazing; they were savory, not sweet. I wanted to try a repeat performance tonight, but I grabbed the flat griddle and my pancake batter ended up turning into ultra-thin, flat crépes. They were a little dry, but still savory. Here’s what they looked like hot-on-the-griddle:

1 egg, 1/4 cup almond flour, 1/4 cup half-and-half, dash of cinnamon and nutmeg, cooked in virgin coconut oil, topped with butter

Favorite summer dessert

I am a huge Asian cuisine lover, and I particularly love a certain dessert that most authentic Vietnamese restaurants serve. Most in the Twin Cities call it “Tri-Color Dessert,” but I’ve also seen it referenced as “Rainbow Dessert” or “Rainbow Drink.” For the most part, it uses relatively benign ingredients, other than massive amounts of sugar. Here is an image that I gacked from Google:

I’ve adapted my own variation of this dessert, which I enjoy immensely. The only thing I’ve left out are the mung beans and the gelatin, which I may add at some point if I feel like doing the extra work. For now, here it is:
